The impressive Paxxo is made from dried grapes: mainly corvina, supplemented with cabernet sauvignon, rondinella and merlot. After the harvest, the grapes are placed in a dry and easily ventilated room, where they lose about 30% of their volume until the end of November.
This method of drying is similar to that of the famous Amarone, but takes a little less time. After fermentation, the wine matures for another twelve months in oak barrels and eight months in the bottle. The result is an impressive red wine with the strength and character of Amarone!
