Our part of the Kröver Paradies includes the Gewann (subsection of a vineyard) “Kröver Höhl”. We have this in monopoly ownership. It is characterised by special steepness, the proximity to the Moselle and an enormous proportion of clearing in the ground. Our part of the Kröver Paradies is oriented to the west, which is why in the afternoon and evening there is a great heat in this location. These properties create fascinating wines that are characterised by a special minerality.
The late harvest is the second stage of the predicate wines. Below this quality level is the cabinet, above it is the selection. The predicate does not allow conclusions to be drawn about the sweetness of the wine, but reflects the degree of maturity of the grapes and thus shows the character of the wine. (Only the flavour indications, such as “dry” or “finely tart”, indicate how sweet the wine tastes.)
Late harvests are obtained from highly ripe grapes and therefore have a stronger taste than the cabinets. The grape must for late harvest must have a legal minimum must weight of 80° Öchsle (the must weight describes the content of natural sugar in the must). Predicate wines are subject to the highest quality standards. For example, no sugar may be added to the must. Furthermore, the wine must undergo a chemical analysis and an official examination by a tasting commission.
