Winery:
In the heart of the Barolo DOCG, located in Castiglione Falletto, are the unique cru vineyards of Cavallotto. Cavallotto is one of the oldest producers of Barolo, which embraces a traditional, terroir-oriented style of winemaking. The various terroirs of the cru’s Bricco Boschis (with its remarkable ‘single vineyard’ Vigna San Giuseppe) and Vignolo are beautifully refined in their Nebbiolo wines. In addition to Nebbiolo, Cavallotto also produces a remarkable Barbera d’Alba Superiore.
Vineyard and region:
Derived from the ‘San Giuseppe’ vineyard in the cru Bricco Boschis, located in the municipality of Castiglione Falletto in Barolo. The vineyard is centrally located in the amphitheatre-shaped area of the cru. In this vineyard are very old grapevines, planted between 1932 and 1956. Vigna San Giuseppe benefits from a perfect southwest location and a sandy soil.
Vinification:
The grapes are destemmed and fermentation takes place at a controlled temperature of 29 degrees Celsius. During this process, the ‘hat’ is regularly dipped and the juice is regularly pumped over, giving the wine more colour, tannins and flavour. The total maceration time is 30 to 35 days. After fermentation, the wine matures for 48 to 60 months in Slavonian oak barrels of 20, 30, 50, 80 and 100 hectolitres. The wine then ages on the bottle for another 12 months before being placed on the market.
